๐Ÿ‘‡ CHIPOTLE SHRIMP with SPICY AVOCADO RELISH - โ€œWalking #PlanTACOโ€œStyleโ€‰๐Ÿ‘‡โ€‰โ€‰

INGREDIENTS (serves 4):โ€‰โ€‰โ€‰โ€‰โ€‰
3 large garlic clovesโ€‰โ€‰โ€‰โ€‰โ€‰
1/3 head green cabbageโ€‰โ€‰โ€‰โ€‰โ€‰
1/3 cup Sauerkraut (refrigerated kraut, made without caraway seeds) โ€‰โ€‰โ€‰โ€‰โ€‰
5 Scallionsโ€‰โ€‰โ€‰โ€‰โ€‰
1 fresh Jalapenฬƒo or Serrano โ€‰
1 or 2 fresh Limesโ€‰โ€‰โ€‰โ€‰โ€‰
1/4 Cup Apple Cider Vinegar โ€‰โ€‰โ€‰โ€‰โ€‰
1 lb Raw Shrimp, shell/tails removedโ€‰โ€‰โ€‰โ€‰โ€‰
1/2 Tablespoon Chili Powderโ€‰โ€‰โ€‰โ€‰โ€‰
4 Tbsp Avocado Oil โ€‰
2 Cups Red Enchilada Sauce (I used @sietefoods)โ€‰โ€‰โ€‰โ€‰โ€‰
1 FIRM Avocadoโ€‰โ€‰โ€‰โ€‰โ€‰
Fresh Cilantroโ€‰โ€‰โ€‰โ€‰โ€‰
4 bags @Barnana Organic Plantain Chipsโ€‰โ€‰โ€‰โ€‰โ€‰

HOW TO:โ€‰โ€‰โ€‰โ€‰โ€‰
1๏ธโƒฃMince garlic cloves. Add 1 teaspoon of the garlic to a medium glass bowl. Set the rest aside for the shrimp.โ€‰โ€‰โ€‰โ€‰โ€‰
โ€‰โ€‰
2๏ธโƒฃ Finely Chop cabbage, sauerkraut, 2 scallions and jalapenฬƒo/serrano (or pulse in a food processor). Add veggies to the bowl plus 1/2 squeezed lime, 3/4 tsp of salt, splash of ACV and mix aggressively. Set aside to ferment.โ€‰โ€‰โ€‰โ€‰โ€‰

3๏ธโƒฃ Rinse the shrimp, pat dry, and Dice into bite-sized pieces. Season with chili powder, 1/2 tsp salt, black pepper, 1 tsp avocado/olive oil , and 1/2 tsp ACV. Mix well.โ€‰โ€‰โ€‰โ€‰โ€‰

4๏ธโƒฃ Heat a sauce pan over medium heat and enough avocado oil to coat the pan.โ€‰โ€‰โ€‰Mince 3 scallions and add to the hot pan plus salt & pepper. After a minute, stir in remaining minced garlic. โ€‰โ€‰โ€‰โ€‰โ€‰

5๏ธโƒฃ Quickly add shrimp, stir well, and cook untouched for 3 min. Stir and add Enchilada Sauce. Lower the heat, simmer uncovered until shrimp is cooked through (5+ min). Turn heat off,  squeeze in 1/2 a lime. Taste for salt.โ€‰โ€‰โ€‰

6๏ธโƒฃ Finish the relish: Add 1 tsp of oil + minced 1/2 bunch of cilantro, stir well. Relish should taste pretty salty and sour. If not, add more salt/vinegar. Gently toss in 1 firm avocado (diced small).โ€‰โ€‰
โ€‰
7๏ธโƒฃ Serve: use scissors to cut your @Barnana bags longways. Top with chipotle shrimp, avocado relish. Garnish ideas: cilantro, scallions, sliced pepperoncini.โ€‰

    Shortly after taking this photo in 2014, I became a perfectionist about my diet. I was graduating from culinary school and felt super guilty for eating so much sugar, canola oil, milk, butter, and rice flour throughout the year (luckily, my school let me do the course entirely gluten-free because Iโ€™m intolerant).โ€‰โ€‰
โ€‰โ€‰
At first, it felt good to clean up my diet and eat more #Paleo, with whole foods and lower toxins...โ€‰โ€‰
โ€‰โ€‰
But it quickly became somewhat obsessive.โ€‰โ€‰
โ€‰โ€‰
I thought everything was going to cause cancer in my body and that I had to change everything I ate or purchased for my household in order for us not to get sick and fat. โ€‰โ€‰
โ€‰โ€‰
That eventually became a burden on my psyche and on my relationships. I wasnโ€™t a health coach at the time, and I could see how it spiraled out of control...โ€‰โ€‰
โ€‰โ€‰
โ€ฆthat wasnโ€™t the life I wanted to liveโ€ฆโ€‰โ€‰
โ€‰โ€‰
I began to lose a part of myself that wasnโ€™t worth losing.โ€‰โ€‰

    His story just blows my mind. A cancer diagnosis that sentenced him to 3-6 months left to live. He decided to go an unconventional route with cancer treatment to stand a chance at a better quality of life in his remaining months (which turned to years), and heโ€™s the only patient his Oncologist has seen with this sort of success.โ€‰โ€‰โ€‰โ€‰
